Zucchini Bread
Yesterday, our village had a lantern walk. I'll explain more on that Tuesday, which is Martinstag. I tried to get pictures but they didn't turn out so good, so I'll try again later this week. It is in honor of St Martins day (Martinstag,) which is Tuesday 11.November (we will go on a larger lantern walk that day too.)
The other day at the market, I found a great deal on a bag of three foot long zucchini's. Being autumn and so close to Thanksgiving, my domesticated creativity levels are running on full gear. So, we made zucchini bread! This may not sound like much of an endeavor to most of you. But since being in Germany, I have not baked nearly like I used to, so it was pretty special in our home.
I grated up the first zucchini and had enough for more than two batches of bread. So we made the first one in a 7x4" loaf pan and the second batch was in two smaller loaf pans.

Then with so much more zucchini left over, I froze 1 cup portions to make more bread for Christmas. I've also heard of adding zucchini to meatloaf, so we may try that too.
